I really hate the 90km/h speed limit and I'd like to avoid those missions completely. Is there a way to disable them? If not, how do I tell if a contract IS one of those so I'm able to skip them?
To remove speed limit for trucks open Options>Gameplay>scroll down to Truck Settings>Truck Speed Limiter. Untick the box and you are good to go. If you ever decide to join World of Trucks and use External Contracts within the game, then speed limiter won't work and your speed will be 90 km/h max no matter the mentioned option.
